Ingredients:
1 bunch kale, massaged & chopped.
6 tbsp. olive oil
6 tbsp. lemon juice, freshly squeezed
2 tbsp. Lemonfair saffron honey (how-to below)
1 1/2 tsp. fresh thyme, chopped
1/2 tsp. salt
1/2 tsp. black pepper
For topping: sliced almonds & shaved parmesan 

Saffron Honey:

Heat 1 jar of honey on stove top over medium low. Grind a generous pinch of Lemonfair Saffron with mortar & pestle or the back of a spoon. Add saffron to the honey and stir constantly for 5 minutes. Contents can be added back to jar and saved for future uses. 

Directions:

In a jar, add olive oil, lemon juice, saffron honey, thyme, salt, and pepper. Shake well to combine. 

In a large bow, add kale, then pour dressing over the greens. Top with sliced almonds and shaved parmesan to taste.
