This saffron butter pasta is a low effort, high reward meal. By blooming the saffron in warm butter, you extract its iconic golden hue and earthy, floral aroma that makes the dish feel truly gourmet. Each bite is coated in a luxurious saffron-infused butter sauce, complemented by aromatic rosemary and crunchy garlicky breadcrumbs. Simple yet sophisticated, it's perfect for any occasion.

Ingredients:
1 lb. pasta
1 stick butter
1 generous pinch Lemonfair Saffron, ground
2 sprigs fresh rosemary, stems removed
1/2 c. breadcrumbs
1/2 tsp. Lemonfair Spanish Roja Garlic Powder
Zest of 1 lemon
Salt & Pepper to taste
Parmesan for topping 

Directions:

1. Infuse the Saffron into Butter
In a small saucepan, melt the butter over medium-low heat. Once melted, stir in the ground saffron threads. Remove the pan from the heat immediately and let it steep for at least 5 to 10 minutes. The butter will transform into a deep, vibrant gold during this time. 

2. Toast the Breadcrumbs
While the butter rests, heat a small skillet with a splash of olive oil over medium-low heat. Add the breadcrumbs, stirring constantly to ensure even coating. Incorporate the Spanish Roja garlic powder, rosemary, salt, and pepper. Continue to toast, stirring frequently, until the crumbs are a deep golden brown and the rosemary is fragrant. Remove from heat and stir in the fresh lemon zest. Set aside.

3. Prepare the Pasta
Bring a large pot of heavily salted water to a boil. Cook your pasta until it is just al dente. Before draining, reserve about 1/2 cup of the starchy pasta water.

4. The Emulsion
Return the drained pasta to the pot over low heat. Pour in the infused saffron butter and half of the reserved pasta water. Toss vigorously with tongs. The starch in the water will emulsify with the butter, creating a glossy, luxurious sauce that clings to every strand. If it looks dry, add a splash more water.

5. Plating and Finishing
Divide the pasta into bowls. Top generously with the rosemary-garlic breadcrumbs and a shower of freshly grated Parmesan. Serve immediately.
