Salmon Salad with Cilantro Lime Dressing
This salad brings together fresh, vibrant ingredients for a dish that feels both satisfying and light. A tangy cilantro-lime dressing with the seasoned salmon offers a perfect balance of flavor and texture. It’s an easy, yet impressive meal that can elevate any dinner, whether you’re enjoying it solo or serving it up for guests.
Ingredients:
2 cups cilantro
1 teaspoon Lemonfair’s Spanish Roja Garlic Powder
1/4 cup fresh lime juice
2 teaspoons Vermont maple syrup
1/2 teaspoon salt
1/2 cup olive oil
2-6 ounce pieces of salmon
5 ounces arugula or other leafy green
1/2 cucumber, sliced
1/2 red onion, sliced
1 cup cherry tomatoes, halved
1 avocado, sliced
Optional additional toppings: pine nuts, cotija cheese, cilantro leaves
Lime wedge for serving
Directions:
Make the dressing: Add cilantro, garlic powder, lime juice, maple syrup, and salt to a food processor and pulse to combine. Slowly add the olive oil and blend until smooth. Taste and add more salt or lime juice to your liking.
Making the salad: Cook salmon to your liking. We recommend olive oil, salt, pepper, and a little Spanish Roja Garlic Powder.
In a large salad bowl, toss arugula, onions, and cucumber with 1/4 of the dressing.
Gently fold in avocado, tomato, and other toppings you've selected. Add more dressing to taste and fold to coat. Top with salmon and enjoy.
